5 pepper breakfast burrito

not a breakfast burrito, but I had one this morning.

it's all about ultra simple food..... spaghetti pesto (from the garden) with lemon meringue pie... food should not be complicated. good hot weather dishes.

some left over mashed potatoes, fried and served on a breakfast burrito. some left over steak scraps. everything on the plate for less than $1.50. you can't beat it. forget the fast-food chains, they just rip you off and serve crappy food.

some red beans (my favorite) and some left over mashed and boiled potato. so simple and so good. wrap it in alum foil and throw it on the engine after you land. pick it up in 20 minutes and enjoy a nice meal in a remote location and ponder the thought of how fortunate.

add a few tomato slices to the grilled baked potato burrito...

upped the red bean to potato ratio to 50%. I like it. food should not be complicated.

a guy from France sent me a note and said, "to get more flavor from the tomato, put them in the pan first, then the egg... and also, that I need a new pan". I know that, working on it. so, I tried it, and I think he is right. this one is with chickpeas and Romano cheese. pushing the breakfast burrito envelope....

mozzarella cheese and chickpeas.... actually, better than I thought it would be, but I don't recommend mozzarella cheese for these. hey, I tried it!
